TWD:Baking With Julia-Madeleines



 Katie and Amy Thisdell of Counter Dog are the hosts for this months TWD:BWJ recipe for Madeleines. Visit their blog to take a look at their creation and for the recipe.

This is a rather easy recipe to work with, but the only challenge I had was that it was difficult  getting the Madeleines out of the pan. I had never had that problem before. I used Pam spray on the Madeleine pans, but that was not helpful for easy removal. Otherwise they tasted great.

  1. I had the same problem, I had to pry them out of the pan. I like the look of yours - mine had pretty dark edges. I am so jealous of your blueberry bush!!

  2. pam is the worst spray for sticky stuff like these madeleines. i never use it because the only time i bought it, it didn't work. bakers joy is a little better. if you can get some from a restaurant supply like sysco, it will work so much better. otherwise, melted shortening/butter and a brush will get much better results than pam ever will.

    despite your trouble with sticking, they came out beautifully!

  3. I used a canola oil spray (Walmart brand, cheap!) and they literally fell out of the pan. I didn't realize the spray would make that much difference. Thanks for sharing! Blessings, Catherine www.praycookblog.com

  5. We buttered and floured, but we also used a mini-muffin pan. They didn't stick at all. Yours look great.

  6. Funny, getting these out of the pan was one of the few problems I didn't have! I used butter and flour.
